We believe that the food system is foundational in building a sustainable, resilient, and regenerative future.
Some details about that...
- Through our agricultural systems we can build healthy soils, increase biodiversity, create habitat, support the health of pollinators, avoid the mistreatment of animals, amp up the nutritional content of our foods and more.
- Through our eating practices, we can avoid disease, restore our gut flora, regenerate healthy cells, maintain or rebuild our relationship with ourselves and the Earth, and more.
- Through our food distribution networks we can decrease the amount of greenhouse gases we emit, cut down on the amount of plastic that we use, access food when it is fresher, decrease the amount of food waste, increase food access and food security etc.
- Through our food culture we can build relationships, create happiness, increase social multi-generational and multicultural connections and cohesion, protect important food knowledge, keep stories of our ancestors alive, and the list goes on.
- Through food waste management practices, we can rebuild soil that is an important agricultural resource - according to this 2015 article, "Earth has lost a third of arable land in the last 40 years.
The HFC works in five key areas:
- Education and awareness building about the importance of healthy food systems.
- Skill and knowledge sharing around healthy production, transformation, and consumption of food.
- Dialogue and discussion about the future of food in Hudson and beyond.
- Community building and networking to build the capacity needed to re-localize the food system.
- Project Development to support our vision.

JJ Corker, Treasurer
Following studies in English Literature, JJ Corker became enamoured with agriculture by reading the poetry of Virgil, Wendell Berry, and John Clare. He later spent five years in England, where he received a diploma in Biodynamic Agriculture and then worked on a vegetable farm, a polyculture vineyard in the south of France, and an orchard with 3,000 laying hens, dozens of beehives and the best apples he’s ever eaten. He is very happy to be joining a group of dedicated individuals trying to bring food security to the region.
Briony joined the HFC team in 2020 as Director of Programs and Development. In her own words, “Food is the great connector! The holistic mission of the HFC couldn’t be more important right now. It holds a vision of the future grounded in reciprocity and respect - for one another and the land," Briony has a BSc in Natural Resource Management and PhD in soil ecology and mine rehabilitation. She has diverse experiences managing natural and social research, policy and community engagement projects. She is passionate about finding ways to facilitate community and ecosystem restoration through knowledge and skill sharing. While not working with the HFC, she serves on the Board of Directors of local non-profit Nature Hudson and Ottawa-based non-profit Evidence 4 Democracy.

Our board consists of seven seats drawn from the community, partner organizations and staff. Board terms last two years and are elected at the annual general meeting, held in February each year.
Esme Terry, Founder
Esme, originally from England, has called Hudson home since 2011. She connects with food in the garden, where she has learned over the years to grow her family's summer menu, and preserve much of it for the icy seasons. As an alternative health practitioner, she uses food as medicine, as the baseline for holistic wellness. She also works in administration for Food Secure Canada.

“Eat them don't weed them”
The Hudson Food Collective invites you to come celebrate Dandelions! The festival highlights the benefits of the dandelion and seeks to dispel the “weed” myth. Dandelions have a taste similar to chicory or endive all parts of the plant can be eaten. Join us at the festival and learn how to cook with dandelions, they can be made into fritters, pesto, wine, tea, coffee, juice and eaten in salads. Let’s re-establish the dandelion’s medicinal place in our contemporary culture. Dandelions are often considered a pesky weed in Canada and the U.S. yet, European and Asian nations have greatly benefited for years from the incredible nutritional value that this weed contains. Studies have shown that the plant holds many health benefits by producing antibodies to cancer and can buffer blood glucose levels for diabetics as some of the medical benefits it can produce. Come join us to taste and share your dandelion stories and recipes. Come and learn about fun new ways to prepare dandelion. We'll also be having a draw for our brand new dandelion recipe booklet and a booth for kids to teach them a cool new way to play with their food. All of this information and more can be found at our Hudson Food Collective booth; as well as the information on our newest project; The Hudson Fruit Tree Project Bring an open perspective and your taste-buds, We will be selling some food to taste like hearty bread with salad; pasta smothered in dandelion pesto; dandelion and burdock soda, and more... Eat while you browse the vendor booths: Honey vendor Fairy Booth: Fairy Gardens and Faith Readings with Victoria Rage Healing Dome with free Reiki Meditation Musical performances and poetry readings Kids Booth: to play with our dandelions and make art |
